The first two are rather mundane, but the last one is kinda interesting. Turns out, bacteria don't like alcohol! Including gut fauna!

Yes. Chewing mixes the initial salival enzymes more evenly with your food and also breaks it down further into smaller pieces. Smaller pieces = more surface area total = easier for bacteria to get at it.
