My girlfriend is 5'3 and around 55 kg, and is looking to gain more weight while keeping up her exercise. Are there any tips around daily exercises that don't burn too many calories but are still good for strength and overall well being?

Honestly bodyweight exercise and keeping a healthy cardiovascular system will be huge. Regular stretching routines as well to preserve mobility and flexibility. Yes cardio does burn calories, but it's much easier to eat more than you burn while working out your cardiovascular system.
