This is probably gonna get very controversial, but fit guys with fat fetishes probably stems somewhat from how wrong/risque it is. I think it's from a subconscious motive that many wouldn't even recognize themselves, but if a guy works very hard to have his ideal body type as fit/athletic but he gets off on big, doughy, cuddly fat girls, it probably has to do with the "wrongness" of it, which is a theme in many, many kinks.
