If there's any market for another book in the future I'd like to try my hand at writing for it I think. How long were most of the stories in it?

Yeah, as a fantasy it's very enticing, and I love fantasizing and role-playing getting to absolutely immense/hyper-immobile sizes.
But I don't think I'd want to get so fat I couldn't move in real life

It's all down to what you want really. What you're comfortable with.
If you're not absolutely sure, I'd suggest a "test-gain" of 10-15 pounds. Then take some time to decide whether you want to continue or not.
As for the how, figure out the foods you like, and up your supply of them. Don't try to start stuffing too quick, or you might make yourself sick, and put yourself off of it in the future. Slowly increase your intake and capacity.
