In my experiences with myself and my wife......It is easier to gain back much quicker...kind of like muscle memory....but it is Fat memory.
I noticed with myself that not only did I gain back very quick with eating more but it was softer on my belly not to mention some others areas fattened up softer and quicker.....like my butt, love handles and thighs.
My wife has gained , lost & re gained many more times. When she first started gaining her lower belly would really stick out with a nice huge lower belly roll when sitting but when standing it would look like she was pregnant. Her Butt, thighs and other areas would get thick and full along with her breasts expanding. Every regain she had was much softer and jiggly fat as opposed to her first gaining. Her Belly not only didn't blow outward as much but it really expanded wide through her waist and her love handles got really big and soft. Not to mention that lower belly bulge was much softer and she even formed softer fat above that lower belly bulge making it a slight double belly roll while sitting....still with the lower belly much bigger and prominent. Her thighs and Butt got really huge and soft not as tight and thick and her breast got really big and soft. Her upper arms really expanded and got very soft.....I love me some Fat upper arms.
So, I assume everyone is different but there is some similar progression to the weight that is re gained which it is softer and comes back on much quicker than the initial gain.
