Lactose intolerance and weight gain

Hey peeps!
So the situation is that I've got together with a girl. She is really thin rn, but would like to gain 20-25 kgs. She has quite a bad lactose intolerance, so she can't really eat most of the usual fattening foodstuffs.
Another thing is that she can't eat that much at once, because she is a bulimic and her stomach has shrunk quite a bit.
Not sure if this is the best place to ask, but I thought perhaps you can give some advice or maybe even recipes.

Lactase tablets do help, but then again, carbs carbs carbs can really increase the calories without needing any dairy intake.

Big pasta meals, burritos with no cheese, burgers, the list goes on for non sweet stuff. For sweet things, use oil in cakes and mashmallow fluff for a "creamy" filling.

If she has no family history of raised cholesterol, then also consider using animal fats in cooking to replace butter. Duckfat roasted potatoes, lard/tallow based pastries, schmaltz/tallow fried potatoes.

There are quite a few options really. If she has been able to conquer her bulimia, then as mentioned lactaid is great. There is also boost very high calorie drinks that work well for those with lactose problems.

You can also start adding in canola oil or other oils into drinks and food to aid with calorie consumption.
