My family is away this weekend so I made and ate a batch of these pancakes for myself. I've been making this recipe for years. It's simple, but delicious and much better than boxed crap.
Makes 8 pancakes
1cup all purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup milk (I used 2%)
1 egg
2 tbsp sugar
3 tbsp melted butter
Butter for the griddle
Whatever toppings you like.
Mix the dry ingredients then mix the wet ones. Finally mix them together.
Heat your pan or griddle to medium (maybe a bit higher)
Melt butter and add 1/4 cup of batter to pan. If you can fit more than one go for it! Flip when brown, but not burnt on the bottom.
Repeat until all batter is used.
The recipe on its own is about 1000 calories then add butter, syrup, whipped cream etc and it adds up quickly. Enjoy!
