I don't always get around to reading my messages in a timely fashion. Could we have it so messages don't get deleted if the sender deletes their profile?

I do understand the frustration with this. But it is a matter of being compliant with GDPR.

When a member deletes their account everything associated with the account has to be removed.

Due to the nature of the site, we do not need to keep data of users profiles once they remove the account of their own volition.

So unfortunately this may mean that you miss out on messages from users who have left the site.

Please note that this is also the case when we permanently ban an account.
