Your body tries to maintain the status quo. If you are thin, it is likely to stay thin. If you are fat, it is likely to stay fat, Some people are able to switch from thin to fat, but then remain fat, sometimes Very fat (600 pounds). So make sure that if you find a way to gain you are happy staying at that weight.

have you tried eating in larger plates and slowly increasing the amount of food you eat during regular meals each day... ? I found it quite efficient ... and also, if you love pasta, there are a thousand ways to prepare them and a lot of different options for the type of pasta itself (italian, asian, etc etc) ... I also found that adding reasonable amounts of heavy cream to certain dishes and desserts does wonder to help with healthy fat gain ... as long as you're intolerant to it of course.... it's also a matter of steady eating and commitment, a hefty breakfast to start the day and cakes and pastries as an afternoon snack surely help a lot too ...

Weight gain advice/help

There may be something to the skipping meals to eat one large meal. I'd like to hear from more people on this one.

It seems like it makes sense but my only worry is if you're eating one massive meal per day, if its around 2000 calories that can't be enough.

Still like to hear people chime in. This is good stuff.

I'm experimenting with what I call the "Insulin diet".

I sip a highly concentrated dextrose shake thgroughout the day in an attempt to have my insulin constantly spike and keep my body in a state of storage and hunger. I do eat 1 or two large meals in addition to the shake.

It does seem to increase my hunger.

My worry with the 1 or 2 large meals a day is the intermittent fasting effect of not eating for too long and having my body start to eat itself.

Would love to hear from others how they gained weight over time.
