Gaining

Potbelly to apron/overhang

Well from your pictures, it looks like you don't have too much subcutaneous fat, which is the soft fat just under the skin (it's also healthier). You seem to have more visceral fat, which is the hard fat beneath the muscle surrounding the organs. This is most likely because of the high fat content of your diet. Peanut butter, nuts, cheese, and whole milk are all high in fat. I have found that in terms of fat gain, fats put on more visceral fat than subcutaneous, while on the other hand carbs tend to store as subcutaneous fat. While it may seem like a healthier way, too much of the peanut butter, nuts etc. can make you store the more unhealthy fat. You definitely aren't in much danger as of now, but personally I would switch to a more carb based diet that fat based. Now in terms of health, I would not go overboard with the sugar, but I would have a bunch of whole grains (oats and such). A high carb (mostly whole grain) diet can make you feel more energetic and overall better. I used to be a lean 8% body fat at 150 but shot up to 216 by eating a bunch of fat. The only problem was that I had a hard gut as opposed to soft evenly distributed fat. I felt pretty cruddy a lot of the time so I lost a lot of the weight. That made me sad though lol so I gained some back but with a more carb based diet and found myself feeling pretty great and with the soft fat I wanted.
