Gained 15 pounds with heavy cream, lost it all, but now i'm flabbier than before?

I gained from 135 to 150 using heavy cream, then lost it all over the course of a few months after stopping the heavy cream. However, my body looks and feels way different from before even though I weigh 135 again.

I used to be able to see my abs and didn't have any belly fat to pinch, but now my abs are gone and everything feels soft. I even have belly rolls when I sit.

What happened?

Why would there be muscle loss if I didn't change by exercise (or lack of exercise) habits?
