Maintaining new, fatter weight

I’ve managed to gain about 7 pounds in the last few weeks, which is my best gain yet in such a short time and I’m excited about it! I’ve been eating twice the amount of calories needed to maintain my weight, gradually increasing the calories every day, and so the pounds have come on fast.

In the past, though, I’ve always ended up sliding back into old habits and losing the weight again as soon as I stop spending all day eating, kind of like what usually happens to dieters who gain the weight back except in the opposite direction. I want to avoid it happening again. Not only do I prefer being heavier, it’s important for my health not to get too skinny because I have some chronic health issues that are made worse by being too thin.

Does anyone have tips for avoiding weight loss on a busy schedule when I won’t have time to eat constantly? It is fine if I gain more weight, and in fact that would be even better than just maintaining, all I’m concerned with is NOT losing weight. Is there any kind of food that is very high calorie and easy to eat on the go, or is there another secret to keeping weight on?
