My best guess is that it would not have any effect on you long term. You pretty much have to overeat on a regular, daily basis to gain weight rather than once a month.
But not knowing you or your body, you can try it a few times, and see how your body reacts, if at all.
Edited to add: When I used to stuff occasionally, my weight didn't change. When I put effort into overeating almost every day, I put on 30lbs.
