Any raw food that goes through a process is "processed food". E.g. pasteurized milk, canned veggies or beans, canned fish, butter, bread.
"Ultra-processed" is basically where the ingredients have long scientific-sounding names that you don't even know what they are, plus artificial coloring. They make 'em softer so it's easier to just gulp or slurp it down so you can consume more faster.
