You could blend peanut butter with sweetened plant-based milk such as almond or soya milk etc. You could add bananas, nuts, oats and even plant-based heavy cream (if you can find it, Alpro and Elmlea produce some).

It is high in calories so it will make you gain, it is actually pretty healthy too so it won’t negatively affect your health at the same time.

My wife has issues with dairy products so I get Fairlife chocolate milk which is lactose free and silk heavy whipping cream. It’s been doing wonders to her figure and it’s easy on her stomach! She recently has been adding chocolate syrup too!
