It's kind of funny how people joke about fat people being lazy but it can actually be quite hard.
I was stagnant before a recent holiday where I then lost weight.
As of now, I've decided to hold off trying to actively gain as it's not worth spending the money that I was until I feel I'm in a position to really push myself somehow.

I know in the British Military apparently some relatively fat people do join (source: family member who used to train them).
If there was WW3 and some kind of draft, I'd expect those with at least some mobility to still be made to join but in a non-combat position or worse be forced to join and 'suffer' as they're made to lose weight.
That said, I'd also expect it to become a 'point of shame' unless you choose a 'protected' career path like teaching, even if you are made to join but in a non-combat position as long as you're wearing the uniform.
Now that I think about it, this reminds me of a MASH episode where someone was forced to lose weight or be kicked out.

Depending on the airline and passengers, you may be able to get the bulk head/exit row seats if you ask/select/pay at check in or try and get an aisle seat so you can stretch a leg into the aisle.
As for upgrades, one potential option is to stick to an airline with a rewards programme and become a higher tier as they may offer upgrades as a perk for overbooked flights, free seat selection, etc. Also try to look nice.
Just beware that none of these are guaranteed and the latter especially based on anecdotes. Last time I got a free upgrade it was because of a family members staff discount and possibly a glitch.

From what I've heard, holiday centric routes can also be bad, even 'reputable' airlines.

I'd suggest actually looking at the nutritional info and doing the maths as it may not be that economical.
For example, I'm sure one £1.50 frozen pizza I looked at had around ~600kcal Vs ~1000kcal for a triple cheeseburger and large fries for around £5.
The main benefit I find to McDonald's is that it's less filling, so I can eat more, but that comes at a literal cost.

I'd avoid retail unless you know for certain you'll be idle, otherwise these days I'd expect people to be cross trained e.g. you may be on tills for one shift and stacking shelves the next.
I joke at my retail job that they could promote the place during peak as an alternative to gym membership.

I grew up overweight/on the fatter side.
As a kid/teen it was horrible, but as an adult I found no one really cares.
The only comments I would say you really need to be prepared for is friends/family/cow workers, as those are people you'll regularly encounter.
If you're lucky, they're indifferent.
If you're unlucky they might be genuinely concerned but because they THINK they're being helpful.
If you're really unlucky though, they might be malicious.
In my case, I've managed to blow over what little response I got by saying something along the lines of 'I stopped caring and just want to enjoy things while I can' and even joke about how fat I'll get.
But then I'm from the UK.
Really, the only way to tell will be to gain and see the response. In your case, worst case, maybe be prepared to lose weight if it causes too many problems.
