A great way to serve apple puffs to a sometimes slightly reluctant gainer:
Heat a large apple puff in the bowl, then add large dollop of creamy vanilla ice on top.
Most important, hide a slice of Toffee Pecan Roulade under the apple puff.
Serve as the ice cream begins to melt. Apparently they are delicious and head chef had to make a second.
