Two years ago, my bmi was in the "slightly overweight" category. Friends left and right were telling me that I looked very fat. At this moment, I have a bmi that is on the borderline of being in the overweight category and I still look fat. I probably should add that being short at 5'3 inevitably enhances this effect.

I did eat a lot of sugar and cookies/candy to get fat. but read that that is unhealthy .. I now try to eat and drink more cheese and heavy cream because that "somewhat" is healthier

I'm starting to think sugar may have some use cases when it comes to healthy gaining. For example, say someone were to eat some chocolate. The sugar in the chocolate would trigger an insulin response which would increase the amount of stearic acid going into visceral adipocytes. This should then trigger some more thermogenesis in the visceral fat deposit which should shrink it. This would be a balancing act between the glucose fattening up visceral adipocytes and the insulin response it causes funneling more visceral fat burning stearic acid into visceral adipocytes.

Yeah but too much circulating insulin can lead to I insulin resistance, so I doubt eating sugar can be the healthy way to gain.

I didn't feel very light. I slowed down a bit and was more sedentary. I couldn't run as fast as I could before the extra weight gain took place.

Yes, I've experienced it. When friends alluded to the fact that I least appeared heavier, I simply thought that they had faulty memories. What finally clued me in to the fact that I had gotten fat was when at least five people told me that I looked heavier coupled with just how all of my clothes were much tighter.

Before I started gaining I slipped into starvation mode by accident. I was thin and wasn't eating enough for how active I was at work and my body got used to like one meal a day.
I moved away over summer and eating out and more became the norm, so my body thinking food was scarce started to lay down fat from a relatively normal diet. When I noticed this, and having been a gainer before, I took advantage and started overeating. Then recently I started stuffing when I could and my belly has just ballooned since.
I have heard its hard to get back to a regular metabolism, but gaining fat easily now suits me!

Severe caloric restriction is fatal for a metabolism. The longer you do it, the worse the effect.
If you yo-yo diet, it's even worse.
If your body thinks there is a food draught, when you eat again (especially if you stuff your face like crazy) it will hang on to every calorie and you'll gain faster than someone who just overeats all the time.
Constant snacking is also very effective, as it keeps your insulin levels up and insulin is one of the hormones involved in fat storage.
You just have to be careful not to overdo it, because even if insulin resistance is linked to weight gain, it's also linked to type II diabetes...
For snacks, go for nuts (and don't watch the quantity, just keep eating them), bread with thick layers of nut butter, cheeses.
A huge serving of ice cream after meals, with crumbled cookies on top and other sugary toppings (ex: salted caramel sauce, chocolate-hazelnut spread...), would also add some cushioning to your waistline.
I can see someone eating big bowls of granola for breakfast with cream instead of milk. Granola is already very calorie dense, with the cream it would be awesome!
I agree. Finding a balance with respect to your diet is a primary objective. I'm not a dietitian but Ayumi Orihime is %100 correct in that type two diabetes is always a major consideration and that Yo-Yo dieting is dangerous. It's important to find a way to live your life on your terms within reason. I have had a suspicion that in some cases being overweight to a certain degree could even have some advantages. With this in mind, you wouldn't want to achieve this in a fashion that could cause a decline in health. I also agree that eating nuts could help. I'm guilty of having one too many milk shakes (3 or 4) within the course of a week on account of my affinity for them however perhaps a shake every once in a while could be a reasonable supplement.

In reality, I'm 5'3 and 155 pounds. In most of my dreams dealing with size, I'm typically around three times that size.

Don't pressure yourself to figure everything out. It took me a while to know where I was on the spectrum. In time, you will arrive at a logical conclusion.

What are some of your minor annoyances in life?
Today, I asked a store clerk who was a tall and slender young lady standing at about 5'10, if she could tell me where a product was located. She was nice enough however she soared passed me to its location as if I could keep up with her. She was clearly in better shape. I felt like saying " Honey, I'm 5'3 and overweight. I cannot keep up with you". I'm sure that it was unintentional. She's just very energetic making this a minor annoyance.
