That is one thing about regular over-eating, it does tend to progress. That is, if you are eating until you are really full, your capacity tends to increase over time. So if you keep eating until you are full (as opposed to set amounts of food) you likely gradually start eating more. (again bodies will vary, people have free will, and all of that. Just a general trend that many people here have noticed they have gone through. The "I used to think five pieces of pizza was a huge meal, but I just finished an entire pizza and I'm still hungry, hard to believe how much my capacity has increased since I started eating as much as I wanted" type of thing)

I don't know about wisdom, but maybe 'voice of experience.' It is certainly possible, it is just a real commitment. (well, for a story; pure fap fantasy material can be quicker because you mostly skip character development and a plot arc and focus on everyone getting fat, but it is still more to write than a standard quick fantasy)

From a technical point of view, a story like that is a real commitment to write, because you are handling at least four characters and three relationships -- at least if you want to show their bisexuality in action. (it is also possible to just state that the character is bisexual and mention their attractions, but I don't think that is what you were looking for?)
So then you need to come up with a set-up that makes all three relationships interesting, showing different sides of the main two characters. And develop all of that.
I've actually tried a set-up like this, but the story just became longer than I felt was interesting, so I abandoned it.

With people nothing is inevitable, people can make up their mind to change their habits and lifestyle at any point, and some will stick with that.
That said, it sounds like she already has doubts about her dedication to keeping weight off, and with the encouragement of your bad habits, it seems likely that she'll get at least up to her previous high weight. Whatever caused her to change her habits and lose might prompt her to so again when she gets to that size, or she might decide that this time she's ok with it, only time will tell.
Certainly it can't hurt to tell her how beautiful you think she is, how sexy she is to you, to show her a lot of affection in private and in public, and do what you can to keep her in clothes that fit (nothing like too tight clothes and the prospect of having to shop for a larger size to motivate some people to lose some weight).

There are not many metabolisms that can stand up to heavy eating indefinitely. If she can develop a taste for rich food, frequent snacking, and occasionally really stuffing herself, she may find the weight starting to creep on.

Haven't checked it out in person yet, but Old Navy has been advertising that they are now carrying up to (IIRC) size 28 in store -- with no little 'plus size' section tucked in the corner, all sizes of all clothes in the main racks. Might be worth checking out for cheap stuff.

I'm about the same height as you, but my thinnest adult weight was 170 lbs, so I wasn't ever exactly thin, but at that weight I played soccer and floor hockey quite hard and went for runs fairly happily.
At 190 I hadn't really noticed a change at first, then I saw a picture from a party where I was sitting down, and I had a pretty visible gut. When I tried to get back into running it was never anything but an uncomfortable slog.
At 210 I played some casual floor hockey, and certainly noticed that I didn't have the agility or acceleration of the thinner guys, and needed regular breaks. But I didn't really feel much different at other times (although I'd switched from running to biking, so I don't know how runs would have been)
By 220 I had to give up my road bike (drop handle-bars) for a hybrid bike with a more upright seating position, because my gut was getting in the way when I was all hunched over. Occasionally I'd feel fat vibrate if driving over a rough road. I still didn't feel particularly fat most of the time, although pictures were noticeably saying that my face had really filled out.
Above that things changed quickly.
- By 225 I really noticed a challenge in tying up shoes or skates (belly in the way), and feeling more jiggle and belly really noticeable. Thigh rub in hot weather became an issue
- By 230 a lot of my size 42" waist trousers and shorts were uncomfortably tight when sitting down, and not many places carry sizes larger than that. More jiggle just going up and down stairs. Noticing my arm pushing against the fat roll across my side ('side boob' sort of thing), noticing that looking straight down was hard because double chin getting in the way, getting a lot of under moob sweat in hot weather. Noticed that my walking had slowed down to below the average person when walking to get somewhere. Started getting more stains on my t-shirts/shirts because my belly kept me slightly farther from the table, and any food that slipped off my fork or spoon landed on my belly.
- By 235 moobs were resting on belly when sitting (leaving a red line at the crease when I'd straighten up), and belly on thighs. General sensation of always rubbing against myself. Getting on shoes could get me out of breath. Noticed my fat pad really thickening up, making a noticeable change in how things looked. Found hot days a lot harder to handle. Notice belly against legs when going up stairs, and belly swaying when going down stairs
- At 240 (the heaviest I've hit), could really feel the belly sway when walking. XL shirts were clearly too tight. Could feel arm fat jiggling while brushing my teeth, and neck fat jiggling if I vigorously shook my head. Getting up off the floor was getting to be a real chore. Noticed it was harder to reach a lot of things because my belly was keeping me further away, and noticed my belly in the way of my usual arm position when using the computer, but on the other hand how I could prop things on my belly. Noticed how automatically I wanted to sit down anytime that I was standing. Began to feel somewhat awkward and lumbering in every day situations. Started snoring more.
I hope that gives you some idea of the experiences, at least from one person's point of view.

I wrestle with the whole "got my boyfriend / husband fat" thread because it suggests it is primarily our doing. My boyfriend had a little belly before we started dating. He likes to eat. Yes, I cook good meals and yes I think he looks good bigger. But he hits fast food when I'm not around, and so it's not like I'm forcing him to eat. My brother always was skinny and now is getting big. My Mom blames his fiance. I look at the large folks in my family and think he's just following suit. I hope this doesn't come off as ranting. I'm not. It's just complicated.
I totally get your point. The communities around this kink are often dominated by the voices of feeders, so it can sound like the feeders do everything. Add in the cultural assumptions about the woman in a het couple setting both the 'moral' tone of the relationship and controlling the food, and everything aligns to say "She made him that way."
But obviously plenty of guys get fat who have wives who would prefer that they didn't (I'm one). Guys are plenty capable of getting fat of their own volition.
Of course, if he wants to get fat or is just naturally inclined that way and she wants him to get fat, it gets hard to seperate who is responsible for what. But for sure ignoring the gaining agency that husbands/boyfriends have is silly.

College tends to have a fair bit of walking, which is honestly good for you but it does burn a certain amount of energy.
Against that you have two sources of calories: food from your meal plan and what you eat outside your meal plan.
With your meal plan you do want to make sure to get a healthy mix of foods (including fruits and vegetables), but beyond that you can look to maximise calories. Higher fat is generally going to be higher calorie than lower fat. The web is full of articles about cutting out fat, so I'd suggest reading some of those to make note of the higher fat things (basically reverse their advice). Sometimes this is obvious: choose whole fat milk instead of half-fat or no-fat, for example, or adding salad dressing onto a salad. Sometimes it is less obvious, but just choose things that you will eat all of and which are filling and you won't go too far wrong.
The real difference maker will be what you eat outside of your meal plan. Of course this means money out of pocket, and only you know what your budget is like. One nice thing about college is you are often moving between places and groups so there is no one person who is watching you most of the day, so you can snack a lot more without it being so obvious. Choosing convenient, quick to eat, high calorie, cheap snacks can really let you add a lot of calories to your day. Ideally you go shopping at a grocery store (or somewhere like Walmart), and look at prices and look at the nutrition information and figure out how many calories per dollar, and stock up on some of the better options. For example pop-tarts are around 200 calories per tart, and say you can get them for something like $4 for a box of 8, that is about 25 cents per 100 calories, and they are pretty easy to carry around in a back-pack or to eat neatly in your dorm. Peanut butter (if you have a spoon) can make a good dorm snack. Take a look around, and figure out what would work for you in terms of snacks. It can be pretty easy to add a lot of calories in snacks during the day and then still have full meals because the meal plan kind of defines what the meals are.
